Here is my latest installment in the healthy eating category. These energy bites are super yummy! I think no-bake is a bit misleading since you need to toast the oats and almonds but that makes them taste really good.
1 1/2 cups rolled oats 1 cup blanched almonds 1/2 cup almond butter 1/2 cup maple syrup 1/2 cup chocolate chips (I like mini’s for this)
Place oats and almonds on a cookie sheet and bake for 8 minutes at 350. Transfer to a blender when cool and grind into a coarse meal. Mix in other ingredients. Scoop into balls. Refrigerate for 1 hour.
This September I will be teaching at Quilting LIVE in Atalnta so mark you calendars! The event runs from September 11-13. I will be teaching a make-and-take class that involves Dresden Plates (my newest addiction). I am also teaching a class on applique based on my quilt Oopsie Daisy (below).
I'm getting pretty excited about this. It is so fun to meet blog readers in person!
