I just had to share. These are the best cookies ever.
Recipe:
1 1/2 cups rolled oats (toast 6 minutes at 350)
1 cup almonds (toast 10 minutes at 350)
combine these in a food processor or blender and blend until coarse.
Add
1 cup whole wheat flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup chocolate chips
Combine and whisk together
1/2 cup canola oil
1/2 cup maple syrup
1 tablespoon vanilla
Add to dry ingredients. Form into cookies (they don’t spread) and place on parchment lined cookie sheets. Bake at 375 for 15 minutes.
Try not to eat them all in one sitting!
Thank you Erin, These look very good and I need to have healthy snacks in my home. These look like they have chocolate chips in them. Am I right? Also, how much maple syrup did you use? And, is that regular maple flavored syrup or real maple syrup. Thank you. Take care and God bless, Cory

I'm assuming it is 1/2 cup maple syrup. What surprised me was no egg which is perfect for our just-turned-5-year-old grandson. The doctor just discovered he is allergic to both eggs and milk and guess what he loved to collect and eat.
